Garlic-kale Chickpea Spaghetti
This is a gluten free spaghetti made with chickpeas . Apart from being a good protein source for vegans and vegetarians, chickpeas is high in fiber. It is a nutritional powerhouse that is rich in zinc, iron, folate and phosphorus, to name a few. This pasta also delivers in terms of taste and texture. Freshly minced garlic sauteed in olive oil takes this pasta to a higher level.
I used the Explore Cuisine brand of Organic Chickpea spaghetti. Feel free to use any brand of your choice.
Let's take a look at the ingredients
Ingredients:
Organic chickpea spaghetti (dry)- 1 packet
Organic pasta sauce- 2 tbsps
Garlic- 5 cloves (finely minced)
Lacinato Kale- 4 leaves (stalks removed and roughly chopped)
Olive oil- 5 tsps ( for cooking and drizzling over the cooked pasta)
Dried basil or fresh basil leaves (optional). I used a tbsp of dried basil
Oregano - 1 tbsp ( optional).
Salt - to taste
Preparation:
Cook the spaghetti according to the directions indicated in the package. Different brands have different cooking times. For a more al dente texture, rinse the cooked pasta in cold water. Strain and drizzle 2 tsps of olive oil over it.
In a heavy bottomed pan, add 2 tsps of olive oil. Over a medium flame, add the minced garlic and chopped kale. Saute for a couple of minutes, until the kale starts to wilt. Add 2 tbsps of pasta sauce, salt, and stir over a medium heat.
Toss the cooked spaghetti with the veggies infused in the sauce. Stir well to bring all the flavors together.
Enjoy this delicious gluten free pasta .
Notes:
1. You may use any Italian herbs of your choice. Basil and oregano are highly anti inflammatory herbs, and give the pasta a rich flavor.
2. You could add in your choice of greens or other veggies like bell pepper, squash etc.
