Avocado toast



This is a very healthy and easy to make sandwich recipe. It comes laden with the goodness of a super healthy fruit, Avocado. Avocado is a fruit that is rich in the heart healthy monounsaturated fats. Mashed avocados impart a smooth buttery feel to this sandwich. Avocados come brimming with many amazing health benefits due to its amazing nutritional profile. It is rich in some essential vitamins and minerals.

I used organic multi grain bread slices, toasted them and topped them with this yummy avocado mash. It makes for a pretty filling breakfast, and will leave you satiated for long enough.

Here is the recipe

Organic multi grain sandwich bread- 4 slices. (Use your choice of sandwich bread)
Avocados - 2
Onion-1/4 cup (finely chopped)
Salt- to taste
Lemon juice- 2 tsps
Lime juice- 1 tsp
Paprika pepper flakes-a  pinch( if you prefer it spicy). I did not add it.

Preparation:

Scoop out the insides of the avocado, using a spoon,and discard the pulp. In a wide mixing bowl, take the scooped avocados. Add finely chopped onion, lime juice, lemon juice and salt. Mix well, and keep covered for 15 minutes for the flavors to blend in.

Toast 2 slices of the bread. Spread out the avocado filling over the slices, and enjoy!!!

Notes:

1. This avocado filling can be made in advance, and refrigerated. Make sure to bring it to room temperature, before stuffing it in the bread, so as  to avoid sogginess.
2. Onions give this sandwich a good crunch and robust flavor.
