Cabbage,long beans and okra stir fry:
I made this simple curry to go along with rice for our lunch today.
It turned out to be a yummy medley of veggies, very much relished by my kids.
Here goes the recipe
Ingredients:
Cabbage- roughly chopped amounting to a cup
Long beans- Around 10-15 strings, ends trimmed and chopped
Okra-chopped amounting to 1/2 a cup.
Oil -2 tsps
Salt
Garam Masala-1 tsp. (I added this in place of the chilli powder).
Spices for seasoning
Cumin seeds- 1 tsp
Fennel seeds-1 tsp
Preparation:
Heat oil in a kadai and season with the cumin and fennel seeds. Once it starts browning slightly, add in the veggies. I added the long beans first, since it takes longer to cook. Fry for a couple of minutes and then add the okra and cabbage.
Add the salt and the spice powder. Add a tbsp of water and cook covered for a while. Take care to make sure there is enough moisture,as the veggies would get burnt without getting completely cooked.
Yummy stir fry is ready to be served with rice /roti
Tips:
To minimize the slime in okra, make sure you pat dry the okra completely before chopping them. A dry cutting board and a dry knife definitely goes a long way in making sure we don't end up with very slimy okra .
