Simple vegetable rice
Rinse the cauliflower florets, and immerse them in boiling water, to which a pinch of salt and turmeric powder has been added. This will help in disinfecting the florets. Once the florets appear fork-tender, drain the water, and keep aside the florets, ready for use .
Spices for seasoning:
Cumin seeds- 2 tsps
Fennel seeds- 1 tsp
Preparation:
In a kadai, heat 3 tsps of ghee. Add the cumin seeds and fennel seeds. When it starts crackling, add the chopped carrots and cabbage. Add salt, chilli powder and garam masala (if using). Saute for 3 -4 minutes, on a medium flame. Add the cauliflower florets and green peas. Adding water sufficient enough to cook the vegetables, cook covered, until the vegetables are done. They should be cooked, until tender, but overcooking, will cause the peas and cauliflower to get mushy. Once done, turn off the flame.
Spread the cooked basmati rice in a wide plate to allow it to cool. Adding a few drops of sesame oil will help the rice from sticking to each other. Add the vegetable medley to the rice, and mix well.
Yummy vegetable rice is ready. Enjoy it with raita, chips or any other side of your choice.
Notes:
1. You can prepare this rice with any combination of vegetables of your choice.
2. For a milder flavor, skip the garam masala, and just add the chilli powder
3. The cooked rice will better retain its texture, if the vegetable medley is mixed, when not too hot.
4. Sauteing the vegetables in ghee will lend a superb aroma and flavor to this rice.
5. Adding sesame oil to separate the grains of rice is purely optional. My mom does this and it works for me as well. You could just spread the rice in a wide plate, and fluff the grains with a fork.
6. If using dried peas, pressure cook it separately, before adding to the vegetable rice

I made this rice with 4 veggies- carrot, cauliflower, cabbage and peas. All these 4 veggies beautifully complement each other, giving this rice an amazing crunchy texture. You could add in onions for extra flavor. This rice tastes great with just some raita or chips on the side.
If you have chopped the veggies, this rice can be prepared in a jiffy. The other ingredients that go into the making of this dish are minimal, and the biggest selling point is that it requires no grinding.
