Gluten free and vegan Banana bread
This is one incredibly yummy bread loaf that I baked at home in my oven. I got the recipe from https://beamingbaker.com . The original recipe uses some nuts and maple syrup. I tweaked the recipe slightly to make it nut free. I did not use maple syrup, to avoid the extra sugar. Using perfectly ripe bananas for this recipe provide that perfect hint of sweetness. I did not want an overtly sweet bread.

This bread tastes great topped with some melted grass fed butter, or jam. It makes for a healthy snack for school as well.
Let's look at the ingredients needed
Wet ingredients
Ripe bananas- 3
Melted coconut oil- 1/4 cup
Flax egg- 1* (see notes on how to make flax egg)
Organic Vanilla extract- 1 tsp
Dry ingredients
Gluten free oat flour- 1.5 cups
Almond meal-3/4 cup
Aluminium free baking powder- 1 tsp
Baking soda- 1/2 tsp
Salt-1/4 tsp
Notes
1.Preparing flax egg*- This is the egg substitute that we are using in this recipe. To 3 tbsps of slightly warm water, add 1 tbsp of ground flaxseed. Mix well, and let it rest for atleast 10 minutes before using it in the recipe. This will turn slightly gelatinous, as it sits for 10 minutes. Add it to the recipe, in the order indicated.
2. Make sure to use Aluminium free baking powder. Aluminium is a known neuro-toxin.
3. I ground up gluten free rolled oats in my food processor, and sifted the oat flour, with a sieve to separate out the chunks, which had not ground up completely. I ran it through the food processor again. You could buy the gluten free oat flour as well.
4. I use the Bob's Red mill brand Almond meal
Preparation
1. Preheat the oven to 350 degrees Fahrenheit. Grease the edges of the bread pan with some cooking spray. I use a 8 inch glass bread loaf pan.
2. In a bowl, add in all the wet ingredients. Mash the bananas well with a fork, to make sure no big lumps remain. Pour in the melted coconut oil, vanilla extract and the flax egg. Stir to mix everything together.
3. In a large mixing bowl, mix the gluten free oat flour and almond meal. Add the baking powder, baking soda and salt. Now add the wet ingredients to this bowl. Whisk all the ingredients well to get a smooth bread batter.
4. Pour the prepared batter into the greased bread loaf pan. Using the back of a ladle, even out the top surface of the batter.
5. Once the oven has heated to 350 degrees fahrenheit, place the pan carefully in the oven. Bake for 60 minutes.
A simple way to check if the loaf has cooked evenly throughout, is by inserting a toothpick gently, in the center of the loaf. If it comes out clean, the bread is done. If not, cook for another 10 minutes.
6.Let the bread cool down for at least 2 hours, prior to slicing. This way, it will not break while slicing.
