Cabbage stir-fry
This is one incredibly healthy stir-fry recipe, which suits perfectly for rice varieties. The number of ingredients required are minimal, and the whole dish can be put together in a matter of minutes.
Cabbage is a very versatile vegetable, which lends itself to use in a variety of dishes like stir-fries, pulavs and paratha varieties. It is a valuable addition to any dish because of its impressive nutritional profile. Cabbage is a good source of Vitamins B1, B2, phosphorus, folate and copper, to name a few.

Ingredients
Cabbage- 1 cup (roughly chopped)
Turmeric powder- 1 tsp
Grated ginger- 1 tsp
Salt- to taste
Oil- 2 tsps
Spices for seasoning:
Mustard seeds- 1 tsp
Preparation
Heat oil in a kadai. Add the mustard seeds.When it splutters, add the chopped cabbage, turmeric powder, grated ginger and salt. Add half a cup of water to cook the cabbage. Stir well to bring everything together. Cook covered on a medium flame until the cabbage is soft. It should be tender, with a slight crunch. Overcooking will cause it to appear slightly mushy.
Once done, transfer to a serving bowl. Serve this healthy curry with rice. Enjoy!!!!

1. Ginger has powerful anti inflammatory benefits. It really enhances the taste of this stir fry.
2. If you intend to have this dish as a side for rotis, add in some onions and tomatoes, for more flavor
3. Some fresh/frozen peas can be added for some fiber. Throw in some chopped in carrots, and reap in the benefits of this healthful medley.
