Besan flour flatbread


This is a gluten free alternative to rotis. This is a very easy to prepare flatbread. The number of ingredients required are minimal. They can be prepared quickly as well. This recipe requires the use of tapioca flour, in addition to besan. Tapioca is extracted from cassava . This tapioca flour is used widely in gluten free recipes, as is or in combination with other gluten free flours.

An added bonus, is that this is a dairy free recipe as well. The liquid base in this naan is coconut milk, which is a very healthy fat.

This flat bread pairs very well with  north indian style gravies. Do take a break from the regular rotis, and try this flatbread. You will not be disappointed.

Here are the list of ingredients you will need

Besan flour- 1/2 cup
Tapioca flour-1/2 cup
Coconut milk- 1 cup (Use the full fat canned coconut milk). I use the Native Forest brand. It comes in a BPA free can.
Salt- as needed
Minced garlic -2 to 3 cloves (optional)
Cilantro leaves- a fistful (optional)
Ghee- as needed for making the flatbread.

Notes:

1. I use the Bob's Red mill brand tapioca flour.  This is a binding agent used for gluten free recipes, and will give a springy and a chewy texture to the flatbread.
2. Using garlic and cilantro leaves is optional. You may add it for more flavor.
3. This flatbread tastes good with a generous amount of ghee added during cooking.

Preparation of the batter

Take the above mentioned ingredients in a wide bowl.Stir well after adding 1 cup of coconut milk, making sure that there are no lumps in the batter. For more flavor, add in some minced garlic and a fistful of cilantro leaves. Let the batter rest for 10-15 minutes.

Preparation of the flatbread

Heat a tava. Drizzle with few drops of ghee. Pour a ladle full of batter onto the tava.  Drizzle a tsp of ghee around the edges. You will see bubbles appearing on the surface, and the batter firming up a bit. Once cooked, flip it over and cook the other side, until you see brown spots appearing on the surface of the flatbread.

Remove from tava, and repeat the procedure for the remaining batter.

Serve hot with some yummy gravy.Enjoy these chewy flat breads.

Notes

1. Cook the flat breads over a medium flame. If cooked on a high flame, the bread will brown too quickly, leaving the interiors of the bread uncooked.
