Cauliflower stir fry


This is a very easy to prepare cauliflower curry that goes really well with rice or rotis. The star ingredient is cauliflower, which is undoubtedly, one of the most versatile vegetables, lending itself to anything from parathas, pulav's and simple stir fry's as this.

Without further ado, let's proceed to the recipe.

Ingredients:

Cauliflower florets - 2 cups
Chilli powder/Sambar powder- 1 tsp (adapt it to your spice preference)
Salt- as needed
Oil- 2 tsps

Notes:

After rinsing the cauliflower florets under running water once, keep them immersed in a pan of boiling water, to which a small pinch of salt and turmeric powder has been added. The antimicrobial property of turmeric, will help in disinfecting the florets. Once clean, drain the water and keep the florets aside.

Spices for seasoning:

Mustard seeds- 1 tsp

Preparation

Heat oil in a kadai. Add the mustard seeds. When it splutters, add the chilli powder. Over a low flame, roast the chilli powder in the oil for a couple of seconds.Add in the cauliflower florets and salt. Stir well to make sure everything gets blended together.

Cook covered over a low flame. The florets should be tender, retaining a bit of the crunch. If overcooked, the florets will turn mushy. Once done, turn off the stove.

Transfer to a serving bowl. Enjoy it with rice or rotis.

Notes:

1. Onions, peas can be added to this curry to make it more flavorful. 
2. Chilli powder roasted in oil, lends a unique flavor to this curry. This must be done over a low flame only for a couple of seconds. Otherwise, the stir fry might have a slightly burnt flavor
