Onion gothsu
This is a very easy to make side dish for idli, dosa,pongal and arisi upma. The number of ingredients required are minimal. Gothsu owes its taste and tantalising aroma to the freshly prepared gothsu podi. This podi keeps well in the fridge, and really comes in handy, during rushed morning breakfast preparations. This gothsu podi elevates the gothsu to a completely different level.
Let's proceed to the recipe.
Ingredients:
Onions - 2 (finely chopped)
Tamarind - a small lime sized ball. Alternatively, 2 tsps of the readymade tamarind paste can be used as well.
Salt- as needed
Oil- 3 tsps
Ingredients for the gothsu podi:
Dried red chillies- 2 (adapt it to your spice preference)
Channa dal- 1 tbsp
Coriander seeds- 1 tbsp
Fry the above mentioned ingredients in 1-2 tsps of oil. Once it cools down, grind it to a slightly coarse powder, without adding any water. Keep aside. If storing for later use, store it in a air-tight container, so that it retains it flavor. The gothsu podi is ready.
Spices for seasoning:
Mustard seeds- 1 tsp
Urad dal- 1 tsp
Preparation:
Heat oil in a kadai. When hot, add in the mustard seeds. Once it splutters, add the urad dal. Once the urad dal starts browning, tip in the chopped onions. Fry for a couple of minutes, adding salt. This will help the onions cook faster.
Once the onions turn slightly translucent, add the tamarind extract. Stir well, and cook covered on a medium flame. Once the raw smell of the tamarind leaves, add in the gothsu podi. Stir well, so that the podi blends in. Add 1 cup of water, if needed.
Cook covered on a low flame , until done.
Transfer to a serving bowl, and enjoy it with idli, dosas, pongal or arisi upma.
