Mixed vegetable Dal




This is a very easy to make Dal recipe. It can be made with any veggies of your choice. Steamed lentils and vegetables make for a very filling and satisfying side. This can be had with rotis or rice.



Ingredients:

Finely chopped yellow squash- 1/4 cup
Finely chopped long beans- 1/4 cup
Finely chopped chayote squash-1/4 cup 
Toor dal-1/4 cup
Moong dal-1/4 cup
Salt- as needed
Oil

For grinding:

Grated coconut-1/4 cup
Green chillies-2 (adapt it to your spice preference)
Cumin seeds- 2 tsps

Grind the above mentioned ingredients to a fine paste, adding the needed water. This is the spice paste for the Dal.

Spices for seasoning:

Mustard seeds-1 tsp


Preparation:

Soak the toor dal and moong dal in water for an hour. Soaking the lentils in water will aid in faster cooking. Also, longer soaking helps in reducing the lectins and make it more easily digestible. Drain the water and cook in pressure cooker. Have the cooked dal ready.

Pressure cook the vegetables for 2 whistles. The vegetables should be cooked, but not mushy. Once cooked, keep them aside.

In a kadai, heat some oil. Add mustard seeds, and once it splutters, add the cooked vegetables and the needed salt. Stir for a couple of minutes. Add the ground paste to the cooked vegetables. Add more water, if required and cook covered until the paste blends well with the vegetables 

Add the cooked dal. Stir well to make sure everything comes together. Remove from flame.  

Transfer to a bowl. Enjoy with rice. This kootu makes a healthy side dish for rotis as well.

Notes:

1. This Dal can be made with any lentil combos of your choice.
2. You may cook the lentils and vegetables together. I have sometimes observed that toor dal does not cook well, if cooked in the same container as the vegetables.
