Banana blueberry Maya nut smoothie
This is one amazingly healthful smoothie. This smoothie brims with the added goodness of Maya nuts- a nutrition power house.
In the course of my never ending quest for low oxalate nut options for my son, who has a sensitivity to high oxlalate foods, I came across this website MayaNutInstitute.org.
Maya nut, as mentioned in their brochure, is the seed of a tropical rainforest tree. The Maya nut is high in fiber, calcium, potassium, folate, iron, zinc, protein and antioxidants. It is not a true nut.
An added hooray factor for me is that is gluten free and non allergenic.
The Maya nut powder has a nutty taste, and I find that it works remarkably well as a substitute for cocoa powder, in recipes that call for the same.
I happened to find some organic golden apples at my local grocery, last week and used one of those beauties in this smoothie
The liquid base for this smoothie is home made pumpkin seed milk . I used it for its potent anti parasitic properties.
