Spring Onion Paratha/Hara Pyaaz paratha
This is a really nutritious and yummy flatbread brimming with the flavors of freshly chopped spring onions combined with some spice powders.
I did not make this as a stuffed paratha. I mixed the chopped spring onions along with the other ingredients in the dough.
It makes for a satisfying and hearty meal. You could have it with some gravy of your choice. We had it with pickle and yogurt. Needless to say, it was one amazing meal.
Off to the ingredients:
Ingredients
Whole Wheat flour(atta)- 3 cups
Spring onions- 1 cup finely chopped
Carom seeds (Ajwain)- 1 tsp
Chilli powder- 1 tsp
Turmeric powder- 1 tsp
Garam Masala-1/2 tsp
Salt- as needed
Ghee- as needed for making parathas
Water- as needed
Notes:
1. Rinse the spring onions thoroughly. Separate the green portion from the slightly bulbous white portion. Chop the green stalks finely. Chop the white onions finely.
2. Kneading the dough with lukewarm water is recommended. The water does not have to be too hot. This makes the dough more pliable.
3. You may add oil/ghee while kneading the dough.
4. Let the dough rest for a while.
Preparation of the dough:
In a large mixing bowl, take the whole wheat flour. Mix the other ingredients, and adding the needed water, knead it to make a smooth dough. Make sure it is not too sticky. As the dough rests, it will become softer.
Preparation of the parathas:
Divide the dough into smooth medium sized balls. In a parchment paper, take some atta flour for dusting. Using a rolling pin, roll them out slightly thicker than you would, for the regular roti. Dusting with a little amount of flour will make rolling out the parathas easier.
Heat a tava. Cook the parathas over a medium flame. Gently place the paratha on the tava. Rubbing ghee on both sides, cook the paratha until you see brownish spots appearing.
Once cooked,transfer to a plate and enjoy them hot .
